Personally, I like Don Giovanni and The Marriage of Figaro by Mozart, Carmen by Bizet (although that one may be just a tad overdone), Dido and Aeneas by Henry Purcell (Love! that one, or any of his works, really, not just his operas) The Begger's Opera by John Gay and anything by Benjamin Britten (Love him as much as Purcell, maybe even a little bit more).

Orphée aux enfers is an excellent opera, from what I've heard but I haven't gotten to see that one yet. :(
